HOW TO MAKE PEMPEK PALEMBANG :

BASIC DOUGH pempek
ingredients:
  1. 500 grams of meat or fish mackerel cork (choose a completely fresh)
  2. 10 tablespoons ice water
  3. 3 tablespoons of plain flour
  4. 150 grams of flour
  5. 1 egg white only.
  6. 2 teaspoons of salt
  7. 1/2 teaspoon MSG (can dilewat anti-MSG)
How to make:
  1. Puree the fish with a sieve until smooth.
  2. Enter the ice water, egg whites, MSG, and salt. Add flour and stir until well blended starch.
  3. Shape the dough according to the type pempek
TIPS:
  • The more fresh fish, the better the results pempek you create. Try to keep it in the refrigerator or freezer
  • Many variations pempek existing recipes. To remember, the more liquid (water), the more starch to be added. Typically, the result was even harder.
  • If you have difficulty forming pempek, coat your hands with oil, not the starch, because more and more and more flour to make the dough becomes hard.

ingredients:

  6. 2 tablespoons crushed dried shrimp
  7. 20 pieces of cayenne pepper, crushed
  8. 1 tablespoon tongcai, finely chopped
  9. 1 teaspoon salt
  10. How to make:
Boil brown sugar, tamarind, water, and vinegar then strain.
Add the garlic, dried shrimp, chili pepper, salt, and tongcai.
Bring to a boil again and lift.
